Good Eats During ‘Italian Night’ Cooking Demonstration with Chef Mims

Local chef and restaurateur Pete Mims will create a classic, Italian dinner during an upcoming cooking demonstration course offered by Texas A&M International University’s (TAMIU) Office of Continuing Education. 

The demonstration is scheduled for Thursday, Oct. 25 from 6-8:30 p.m. in the Student Center Ballroom. The course fee is $40 per person and $75 per couple.

During the demonstration, Mims will show how to make pasta dishes from scratch, including lasagna. He will create alfredo and marinara sauces from scratch, Italian meatballs and mozzarella cheese that will top a caprese salad. For dessert, Mims will whip up a traditional tiramisu.   

Before the demonstration, participants are invited to enjoy appetizers and entertainment.

This is the third demonstration by Mims as part of TAMIU’s Continuing Education cooking demonstration series. Mims has held a ‘Cooking for the Holidays’ and ‘Paella with Chef Mims’ cooking sessions. 

Proceeds from both events benefited Voz de Niños, a court-appointed volunteer organization advocating for abused and neglected children. Several Voz de Niños children received a scholarship to attend TAMIU’s Dusty’s Junior University Summer Camp and Programming Camp this year.

“The proceeds all went toward our summer programs and sending four foster children who would not have otherwise had the opportunity,” explained Michelle Begwin, Office of Continuing Education administrative associate. “We appreciate the enthusiasm and support from our community.”
