Advanced Food Chemistry |

This course introduces senior and /or graduate chemistry students to the current available information on the composition of foods. Food Chemistry centers around a detailed analysis of the chemical, biochemical and physical changes that foods undergo during harvesting, processing, storage and handling. Prerequisites: Graduate standing and permission of instructor. |
